Tradition Unchanged: Dina Rizos has taken over the management of Bill's Café from her parents, Bill and Amalia, after 26 years. She is adding some diversity to the menu and keeping the café dog-friendly.
Bill's Café goes toward the lighter side to offer variety

Dina Rizos, daughter of Bill and Amalia, has been managing the family restaurant, Bill's Café, for a little more than a year now.

"Dad seems happy with my style. Of course, my style is a lot like his, so there hasn't really been that big of a change at the cafe," Rizos said.

Bill and Amalia went into "semi-retirement" a year ago.

"We've been running the restaurant for 26 years. Not many vacations or days off. My wife and I would like to spend some time at our home in Greece," he said.

Rizos has been working at the restaurant for most of her life.

"I started working here when I was little, doing the things that I could and learning the family business. I would come in after school and do my homework here," she said. "As I got older, I was given more responsibility. Now I've been managing the cafe for a few years and I still love it."

Rizos has not only grown up in the family restaurant, she's seen families grow there, too.

"We have a lot of regular customers, and that's what makes coming to work each day fun. You see faces that you've been seeing most of your life, and it's like having an extended family come in for breakfast and lunch," Rizos said. "I've known some of the customers since they were children. Now they bring in their own children."

While Rizos has kept things pretty much the same at Bill's Café, she is planning a few changes that she thinks her customers will appreciate.

"We've always been dog-friendly at Bill's Café. So I'd like to fix up the patio a little, maybe put in some warming lamps and a couple of other things that would make it nicer than it already is," she said.

Now, customers have the option of sitting on the patio and dogs are welcome to join them.

"We're a big fan of dogs in my family. Always have been. So it just made sense to allow people to have their dogs with them on the patio. We serve them dog cookies and water," she said.

Another change that Rizos is planning for Bill's Café is a lighter side to the menu.

"We have a lot of customers who are dieting and eating lighter these days, and I would like to be able to offer them some special dishes that help them stay on their diets," Rizos said.

Working carefully with her chef, Victor Mendoza, Rizos plans to have the new menu items available soon.

"Victor has been with us for a decade. He's an amazing chef who can take my ideas and turn them into something wonderful for our customers. He's been doing that since he first started here," she said.

Rizos gives a lot of credit for the success of the cafe to her staff.

"We've got amazing people working with us at Bill's. The teamwork and the great job that they always do is what has helped make us Willow Glen's Best Breakfast for the last three years," Rizos said.

And how are Bill and Amalia enjoying their free time?

"My parents are still very involved with the restaurant, but they take vacations together now and enjoy the time off. We have two homes in Greece and now they can go there and not worry so much," she said.
